How much should you plant in a Vitarack food plot?

I've only planted food plots for Pheasants and quail. I would like to try my hand at establishing a food plot for whitetails in central Nebraska. I've always assumed that there was enough food for the deer in my area (several corn and bean fields). We've owned our property for four years and haven't seen a difference in the antler development, despite very selective harvest. So, if you could recommend something that would provide an additional source of vitamins and minerals--that would help me take the guesswork out of it. Some specifics: We're look at a food plot is less than five acres (Total Acres 200). Our land is river bottom ground, sandy soil (I haven't tested for PH, but will apply Lime and fertilizer as necessary). About half of the area for the food plot is full sun, the other half is shaded. The area has a high water table but does not flood.

We have a lease in Woodward Co., Oklahoma (northwest Oklahoma), that we want to plant food plots on. It's just shy of 1,000 acres, very uneven land with mostly hard red clay soil. The temps tend to be at one extreme or the other with limited rainfall. To make matters worse there are a large amount of range cattle on the property throughout the year with the exception of deer season (Nov/Dec). We'll have to be very selective on placement of our plots to keep the cattle from trampling them. That in itself will give us very small areas to work with. We'd appreciate any recommendations you might give us on what to plant that will provide good variety and nutrition for deer and turkey. Our hope is that you can suggest plants that the cattle will turn their noses up at.
